  • Press the dough into a rough rectangle or oval close to the belt width.

Keep the starting piece centered, reasonably even, and within the usable roller width. Validate its starting geometry in the production trial instead of expecting the rollers to correct a narrow or irregular piece automatically.

  • Place the dough in the center of the intake side.

  • Feed it straight in; do not push from one side only.

  • Let the rollers pull the dough. On manual models, turn the handle at a constant speed. On electric models, guide lightly and do not fight the belt.

  • Soft flatbreads and wraps: 2–4 mm is a broad trial range. The accepted setting must be based on diameter, bake method, flexibility, moisture, and finished-product tolerance.

  • Thicker flatbreads: 4–6 mm can be tested initially, then adjusted for formula, piece weight, pressing or docking, bake profile, and target eating quality.
