Yes, a bakery dough sheeter can be customized in Guangzhou. Voltage, frequency, belt dimensions, working height, controls, branding and some product-handling features can be changed. The important question is whether the change solves a real production problem without creating a new one in the frame, drive, guarding, cleaning or shipping.
A useful enquiry does not begin with “Please quote a 650 mm sheeter.” It begins with the dough block, the final sheet and the way an operator will move between those two states.
Pizza Dough and Laminated Pastry Ask Different Things from a Sheeter
A pizza operation may use a sheeter to reduce manual rolling and obtain a repeatable base. The dough pieces are relatively small, the pass sequence can be short and the final product may not need a long unsupported sheet.
Croissant or puff-pastry production is more demanding. Dough and butter temperature matter. The sheet may pass repeatedly through the rollers, rest, fold and return. Belt length gives the operator room to support the dough. Roller precision and scraper behaviour affect lamination quality.
A sheeter that performs well for pizza portions is not automatically suitable for large laminated dough blocks. The product should decide the base machine.

dough block weight, width, length and thickness at loading;
dough temperature and firmness range;
starting and final sheet thickness;
largest final sheet width and length;
number of passes and folds;

smallest regular batch as well as the largest;
operator position and preferred feed direction;
flour dust, butter leakage and cleaning constraints.
Photos and videos are helpful when they show the current process. A sketch with dimensions is even better.
Choose the Base Format Before Changing Dimensions
Tabletop Sheeter
A tabletop unit saves floor space and can suit small dough pieces, lighter duty and shops with limited production. The bench must support the machine and the operating force. Confirm how the unit is fixed, where folded tables rest and whether the operator has safe access on both sides.
Compact size can become a false economy when long dough sheets hang from the belt or operators have to stop and reposition them repeatedly.
Floor-Standing Reversible Sheeter
This is the common route for larger dough blocks and repeated passes. Longer belts give the sheet room to travel and folding tables reduce the stored footprint.
The buyer should compare both operating and folded dimensions. A machine that fits when folded may block an aisle during production.
Automatic Sheeting or Lamination Line
Automatic gap changes, recipes, flour dusting, folding, cutting and conveyor interfaces can increase consistency and output. They also make product trials, cleaning review, control ownership and line acceptance more important.
This route should be justified by repeat volume and labor savings, not by the attraction of automation alone.
Roller Width Is Not the Same as Final Product Width
The final sheet needs room for edge trimming, side movement, guides and the folding sequence. A product that finishes at 500 mm wide should not automatically be paired with a 500 mm roller.
Send a drawing of the widest sheet and every fold. The supplier can then propose usable roller and belt width with a margin appropriate to the process.
Belt length is just as important. Long belts support the sheet and give the operator time to guide it. Short belts save room and crate volume. The right balance depends on dough block size, pass sequence and operator skill.
Ask for usable belt length and width, not only the machine's overall dimensions.
Starting Thickness Can Be More Demanding than Final Thickness
Buyers often focus on the smallest gap because the final sheet is thin. The first pass may create the higher load. A thick, cold or large dough block can stress the rollers and drive if the reduction is too aggressive.
Agree on the starting block and a realistic pass schedule. The supplier should test the difficult end of the range. A demonstration using a soft, small piece does not prove the machine can handle the buyer's largest chilled block.
For laminated dough, record dough and butter temperature during the trial. A perfect sheet in a cool test room may not prove performance in a warm production area.

Some requests are better solved with an accessory, removable guide, mobile base or workstation change. Ask the supplier to compare the standard route with the engineered route before choosing.
Safety and Cleaning Have to Survive the Customization
Rollers create a serious hand-access hazard. Guards, interlocks, emergency stops, reversing controls and table locks should remain effective after dimensions or controls change. A wider feed opening cannot be treated as a harmless convenience.
Review how the machine is isolated for cleaning, how belts and scrapers are accessed, where flour accumulates and which parts are removed. The cleaning demonstration should include reassembly and the checks required before restart.
Destination buyers should complete their own local safety and compliance review. A factory modification does not remove the operator's local obligations.
Approve a Drawing That Shows the Machine in Use
The drawing should include:
overall, operating and folded dimensions;
usable belt and roller width;
table length and working height;
minimum and maximum roller gap;
control, foot-control and emergency-stop positions;
guard arrangement;
power entry and cable position;
table movement and locked positions;
service and cleaning access;
lifting points, packed dimensions and weight;
model, revision and date.
Compare the drawing with the doorway, lift, aisle and final workstation. Include the operator standing area and space for dough trolleys or racks.
Factory Acceptance Should Use an Agreed Dough
The test should cover the largest and smallest planned loads, starting and final thickness, pass sequence, belt speed and time. Measure thickness at several positions across and along the sheet. Observe belt tracking, reversal, scraper performance and dough release under load.
Test guards, interlocks, emergency stops, table locks and controls. Record noise, vibration, heat and abnormal movement. Finish with the cleaning and folding sequence, then confirm packing, spare belt or scrapers and final documents.
Use measurable acceptance points where possible. “The sheet looks good” is difficult to enforce after shipment.
