Buying Commercial Bakery Equipment in China: Routes, Risks and a Better RFQ
Commercial bakery equipment can be bought from specialized Chinese factories, export suppliers, project integrators and online platforms. The right route depends on the order. A buyer purchasing twenty identical spiral mixers has a different problem from a buyer building a first bakery with mixers, proofers, ovens, refrigeration and stainless worktables.
The mistake is starting with “Where is the cheapest place?” before defining what the equipment must produce. China offers a wide range of models and prices. That range is useful only when the buyer can normalize specifications and verify the final configuration.

Direct from a Specialized Factory
This route is strongest when the product category is narrow, quantity is meaningful and the buyer already understands the specification. Direct communication can simplify repeat orders and technical changes.
The buyer takes on more coordination. Several factories may mean several payments, inspections, packing standards, shipment dates and warranty contacts.
Through an Export Supplier or Trading Company
This route can work for a small mixed order or a buyer who needs export communication. The supplier should add value by selecting models, checking configurations, coordinating documents and resolving problems. If it only forwards catalogues, the extra layer is difficult to justify.
Through a Bakery Project Integrator
An integrator is useful when the machines have to work as one production system. Capacity matching, room layout, utility schedules, tray and rack compatibility, combined testing and consolidated shipping become part of the purchase.
The buyer should still know which items are made by the integrator and which come from partner factories. One commercial contact should not mean invisible sourcing.
Through an Online Marketplace
Marketplaces are useful for discovery and initial comparison. They are less useful for resolving a complicated production line by themselves. Model listings can hide different accessories, electrical configurations and capacity definitions.
Use the platform to find candidates, then run the same technical and supplier-verification process used for any direct transaction.

Build the Equipment List from Bread Type and Working Hours
Product type and daily production time are the two anchors of a credible bakery proposal.
Product type determines the process. Soft buns may need mixing, dividing, rounding, proofing and baking. Croissants add controlled dough temperature, sheeting, folding and cooling. Cakes may require planetary mixing, depositing or mould handling, convection baking and cooling. Pizza may prioritize dough development, dividing, rounding, resting, sheeting or pressing and deck or conveyor baking.
Working hours determine the pace. A target of 6,000 pieces over ten effective hours can use a different machine rhythm from the same 6,000 pieces over four hours. Shorter production windows increase required hourly capacity and often change labor and oven configuration.
Before requesting machines, calculate:
Hourly product requirement = daily target ÷ effective production hours
Then translate that result into kilograms of dough, pieces per minute, trays in proofing and oven trays per hour.
This prevents a catalogue from becoming the production plan.
Ask Every Supplier to Quote the Same Scope
China quotations are difficult to compare when one includes trays, another includes a stand, and a third uses a different voltage or capacity basis.
Create one RFQ schedule with the following fields for every item:
process role and product;
required working capacity;
model and recommended working range;
tray, rack, bowl or belt dimensions;
voltage, frequency, phase and connected power;
gas or electric configuration where relevant;
outside, operating and packed dimensions;
net and gross weight;
included accessories and consumables;
final material claims that affect hygiene or durability;
test, manual, wiring and certificate requirements;
warranty, spare parts and remote-support process;
trade term and named place;
production lead time after specification approval.
If a supplier cannot fill the schedule, the problem is not formatting. The scope is not yet controlled.
Capacity Claims Need a Unit and a Condition
“100 kg mixer” may mean flour or dough. “32-tray proofer” may assume a runner pitch too small for the product. “3,000 pieces per hour” on a divider may use a narrow weight range and ideal dough. “10-tray oven” may not have ten usable positions for tall loaves.
Ask what was being processed, at what weight, on which tray and under what cycle. For a line, ask which machine becomes the bottleneck first.
The theoretical maximum can help compare mechanisms. The recommended working range is what should drive daily planning.
A Low Equipment Price Can Create a High Project Cost
The equipment invoice is only part of the cost. Packing, inland transport, export handling, freight, destination charges, duty, tax, clearance, local delivery, unloading, installation, utilities and commissioning can change the result.
There are also operating costs: labor, energy, cleaning, maintenance, wear parts, downtime and product waste. A cheaper machine that causes inconsistent piece weight or long cleaning stops can consume its price advantage during normal production.
This does not mean buyers should choose the highest quotation. It means price should be compared after product fit and scope are normalized.
A Practical Example
One supplier quotes a low-cost fixed-bowl mixer at the requested maximum batch. Another proposes a smaller working batch plus an additional bowl and lifting solution. The first has the lower equipment price. The second may reduce waiting and recipe change time in a multi-product factory.
For a bakery making one dough all day, the first may still be the better choice. The answer comes from the operating model, not from a general claim about automation.
Verify the Models, Then Verify the Supplier
Start with current model-specific photos, video, nameplate and configuration. Then confirm the legal entity, manufacturing source, payment beneficiary and after-sales owner.
For important machines, prepare a factory acceptance test. Use the buyer's product where practical and record inputs, settings, cycle, output and acceptance points. Check safety functions and the final electrical configuration. Keep the test record tied to the serial number or order.
For a mixed shipment, inspect how accessories and spare parts are labelled. A container of machines is difficult to commission when trays, racks, manuals and small components cannot be matched to the correct item.
Plan the Room with Machines in Operating Condition
Catalogue dimensions often show the closed machine. A workable layout must include doors, folded or extended tables, bowl removal, rack movement, loading positions, cleaning space and service panels.
Map product movement from raw material to packing. Avoid crossing raw and finished flows where the facility's hygiene plan requires separation. Check floor drains, water, exhaust, ventilation, electrical distribution and gas work with local qualified parties.
The layout can reveal that a smaller machine with better access produces more reliably than a larger machine squeezed into the room.
