Stop and isolate energy before clearing a jam, cleaning, or adjusting a scraper as required by the manufacturer and site lockout procedure.

  • Start with a large roller gap (thick setting).

  • Reduce the gap gradually, step by step.

  • Keep the belt lightly dusted with flour, not heavily coated.


Indicative settings (adjust to your machine and recipe):


  • Lock-in and first passes: use a conservative gap that accepts the packet without forcing or tearing it.

  • After the first fold: reduce gradually within the manufacturer's permitted range and your validated recipe.

  • After the second fold: continue progressive reductions while checking width, symmetry, butter condition, and dough resistance.

  • Final sheeting before cutting: use the product-specific thickness that delivers the required piece weight, geometry, proof, and bake.


The exact numbers are less important than the principle:


Never jump from very thick to very thin in one pass. That is how you break butter layers.

Locking in Butter Without Breaks or Gaps


This is where flakiness is won or lost.


Set a Conservative Lock-in Thickness


  • Take the rested dough from the chiller.

  • Pass it through the sheeter a few times at a thicker setting until you have a clean rectangle.

  • Use a lock-in thickness that encloses the butter without excessive pressure. Confirm the starting gap with a small trial batch and document the validated setting for the formula and machine.


Center the Butter Block Consistently


  • Put the butter block in the center or slightly off-center depending on your fold method.

  • Leave enough dough around to fully cover the butter.


Seal Edges Without Trapping Excess Flour


  • Fold the dough over the butter like an envelope.

  • Press edges to seal so there are no openings.

  • Trapped butter will form clean layers during rolling.


Make the First Passes Safely and Progressively


  • Start at a conservative gap and feed the packet squarely according to the machine manual. Keep hands clear of the infeed hazard zone and use only the approved handling method.

  • Reduce the gap in small steps on each pass.

  • If you see butter starting to show or crack, stop and chill the dough before continuing.

Croissants usually use either:

  1. Turn 1

    • Sheet the dough to a long rectangle.

    • Fold in thirds like folding a letter.

    • Wrap and rest the dough until it is relaxed and the dough and butter return to compatible plasticity. Record the condition, not only elapsed time, before the next reduction.

  2. Turn 2

    • Place dough on the sheeter with the open seam facing the same direction each time for consistency.

    • Sheet again, starting with a thicker setting, then gradually thinner.

    • Fold again in thirds.

    • Wrap and rest again until the dough resists neither stretching nor cracking and the butter remains continuous. Use your validated temperature-and-time window as the operating standard.

  3. Turn 3

    • Repeat the process: sheet, fold in thirds.

    • Rest again before final sheeting.


Key rules for all turns:


  • Always keep the dough cool. If it feels warm or soft, chill before the next passes.

  • Rotate the dough 90 degrees between turns so you build even layers.

  • Do not overwork: each turn should be a controlled number of passes, not endless rolling.


If the dough becomes elastic and shrinks back, that is a sign gluten is tight. Rest it longer in the fridge before continuing.


Final Thickness, Cutting, and Product Changeover


After the last rest, you prepare for shaping.


Reduce Gradually to the Final Thickness


  • Pass the laminated dough through the sheeter, starting slightly thicker and moving to final thickness.

  • Set final thickness from target piece weight, triangle dimensions, dough strength, proofing response, and baked structure. Verify with measured product results and document the machine setting; do not assume one thickness fits every formula.

  • Keep thickness consistent across the entire sheet.


Check:


  • The dough should feel cool and flexible.

  • You should see faint, even layers at the cut edges, not smeared butter.


Cut Pieces to Consistent Weight and Geometry


  • Use a cutting attachment or a template to cut triangles with uniform base width and length.

  • Keep weight consistent if you are targeting a standard size (for example 70–90 g raw weight per croissant).


Consistent size = consistent proof time and bake color.


Shaping, Proofing, and Baking Checks


Even with perfect lamination, poor proofing or baking will destroy flakiness.


Shape Without Compressing the Laminated Layers


  • Roll triangles gently, do not press too hard and crush the layers.

  • Keep tension on the dough as you roll, but do not stretch aggressively.

  • Place croissants with the tip tucked under so they do not open during baking.


Proof with Product-Specific Controls


Goal: fully proofed but not overproofed, with butter still inside the layers.

  • Humidity: medium to high to prevent drying

  • Time: proof to validated product cues and measurements rather than a universal clock time. Dough composition, piece size, yeast activity, humidity, and equipment conditions can change the required duration.


Signs of correct proof:


  • Croissants have visibly increased in size and look puffy.

  • Layers are visible, but dough is still holding structure.

  • If you gently shake the tray, the croissant should wobble slightly but not collapse.


Avoid:


  • Very warm proofers that melt butter inside the dough.

  • Overproofing until croissants are fragile and collapse when touched.


Bake to a Verified Color, Structure, and Core Result


  • Use a properly preheated oven.

  • Bake with the time, temperature, airflow, loading pattern, and steam conditions validated for your recipe and oven. Confirm color, layer separation, internal structure, weight loss, and repeatability across the batch.
